Honey Lemon Chicken

This deliciously sweet and sour chicken dish from the American Diabetes Association is the perfect addition to any summer meal.

Serves 4

Serving size: 1/4 recipe

Ingredients
2 Tbsp honey
2 Tbsp freshly-squeezed lemon juice
4 cloves garlic, minced
1/2 tsp black pepper
8 boneless, skinless chicken thighs

Preparation

  1. Preheat oven to 375°F.
  2. In a bowl, combine honey, lemon juice, garlic and pepper.
  3. Coat chicken with honey mixture and arrange in a baking dish. Bake for 40 minutes, until juices run clear when chicken is pierced.
